This source certified organic Ethiopian coffee is grown by small farms participating in the Rainforest Alliance Certification program. The region has a moderately tropical mountain climate, and the coffee is a locally cultivated native variety with historic roots. The red cherries are dried on raised beds and processed naturally. What this means is that the fruit is allowed to dry on the bean, infusing it with berry and fruit notes. We light roast this coffee to bring out its medium body. The cup has a lively start with a berry nose, and finishes with a wonderfully clean and winey note.
